When you think maple syrup, do you think of Vermont? A lot of people do. And, since maple syrup is such a prized ingredient for Vermont chefs, we didn’t have to ask more than once to get a wonderful recipe from the Basin Harbor Resort in Vergennes. Perfect for holiday cookies or with a cup of coffee, these maple shortbread cookies will become a new favorite.
Maple Shortbread Cookies
Ingredients:
1 cup butter, unsalted
3/4 cup maple sugar
1/4 sugar
1 tsp. pure Vermont maple syrup
2 1/2 cups all-purpose flour
Directions:
Cream together the four ingredients. Add flour and chill the dough. Roll chilled dough with a rolling pin to approx. 1/4″ thickness and cut into desired shapes. Bake at 350 degrees until golden brown. Cool on rack.
For the frosting, mix powdered sugar, with maple syrup until the mixture has reached desired consistency. Spread a thin layer on cooled cookies or drizzle across the top. Sprinkle with coarse sugar.
