These cookies would be great with a hot cup of tea while you are sitting and reading your favorite book.
When I asked Sadie from the Basin Harbor Club, located in Vergennes and on the shores of Lake Champlain to share one of their Maple Syrup recipes, she was more than happy to send us this one.
Maple Shortbread Cookies
Ingredients:
1 cup butter, unsalted
3/4 cup maple sugar
1/4 sugar
1 tsp. pure Vermont Maple Syrup
2 1/2 cups all-purpose flour
Directions:
Cream together the four ingredients. Add flour and chill the dough. Roll chilled dough with a rolling pin to approx. 1/4″ thickness and cut into desired shapes. Bake at 350 degrees until golden brown. Cool on rack.
For the frosting, mix powdered sugar, with maple syrup until the mixture has reached desired consistency. Spread a thin layer on cooled cookies or drizzle across the top. Sprinkle with course sugar.
